Bomb-Azz Chicken Tacos 

INGREDIENTS:
  • Two cans of cooked chunk chicken, drained
  • 2 Tbsp of your favorite salsa (optional, helps keep meat from drying while cooking
  • GGs Seasoning, loads it up
  • A dash of chile lime seasoning for “taco” flavor
  • Approx 1 cup shredded Mexican-style cheese
  • Corn tortillas (white or yellow, your choice)
  • Oil for frying (we use vegetable)
INSTRUCTIONS:


In a skillet or shallow pan, pour oil to approximately 1/2 inch deep and heat to high temp.

While oil is heating, add drained chicken to a small pan, heat on medium, while thoroughly shredding with a fork.

Add a liberal amount of GGs Seasoning, (enough to change the color of the meat) a dash of chile lime seasoning, and 2T of a mild salsa (we used Tomatillo) to keep meat from drying while frying.

Heat this mixture while stirring your flavors in. Add a little more GGs and stir in right before starting the tacos!


Lay tortilla flat on your palm, sprinkle a pinch of cheese and top with a spoonful of chicken. (don’t add too much or it will spill out in the pan)

We recommend about 2T of chicken.

Fold tortilla gently in your hand (they can crack or tear), add cheese on top of meat (about two pinches to act as your “glue”), then hold together (from the bottom to top of taco) with tongs.

Lower the bottom of taco into hot oil and allow it to sit upright on bottom of pan for about 30 seconds to firm up bottom of shell.

Slowly start to lay to one side in the oil and gently lay it fully on its side after about 10 seconds.

Allow it to fry on one side until underside starts to firm and brown. When it’s your desired
crispness and color, gently flip with tongs.

When you can easily lift the taco and it’s browned on both sides, hold it over the pan- if oil drips off fully and it doesn’t look “greasy”, good to go!!

Lay it on a paper towel to absorb any remaining oil.

This recipe made 9 tacos. Serve with your choice of sides or accoutrements or eat all by themselves!

You will note the amazing flavor imparted by using GGs Seasoning during the cooking process- it is a full, well-rounded flavor without being overwhelming in any manner.
